Guests need to get into their own room and nowhere else. Staff need to get through a shift without a ring of forty keys. The duty manager needs to open everything, including the cellar, cool rooms, office, cash room and kitchen store.

Turnover makes it harder. When a casual bar worker leaves with a key, that key still opens the cellar until the lock is changed. Guests take room keys home, and cleaners and contractors only need access at set times. A bottle shop has its own takings and its own keys.
